I had planned on staying cool this summer by making lots and lots of popsicles. I have a ton of recipes on file but as soon as I got pregnant my tastes changed and my sense of smell was completely out of whack. There were a few weeks during the height of my morning sickness where I couldn’t even think about food without gagging. It was quite sad as food and eating is such a big part of my life. I’m finally in my second trimester and my taste buds are starting to normalize and food smells great. It’s very exciting. Luckily the weather is still warm. I know it’s October and technically fall but it was 100 degrees in San Diego today so I made popsicles! They are creamy, slightly sweet with chucks of fruit. If you don’t live in warmer climates, tuck this recipe away for next summer!
- 2½ Cups Yogurt
- ¾ cup Simple Syrup
- 1 cup Strawberries, chopped or sliced
- Place 10 popsicle sticks into a dish with water so that they are submerged.
- Combine the milk and syrup in a measuring cup that’s made for liquid so that’s easy to pour.
- Stir to combine and then pour into a popsicle mold.
- Place the mold into the freezer for about 45 minutes then place the sticks into each mold.
- Place the mold back into the freezer for another 4 hours or until frozen.
- To remove the popsicles, run hot water over the plastic for a few minutes.
